My favorite low carb cookbook – Stella Style

Posted on April 7, 2009 by in Health, Home

I’ve been on a primarily low carb diet for about 4 years now.  I mean, if you don’t count the months here and there where I decide to completely sabotage myself and eat anything and everything I can get my hands on.

The thing about eating low carb for that long is that it gets boring.

You can only have so many hamburger patties with cheese or chicken salads before you want to stab someone.

Add that to the fact that I refuse to cook more than one meal at dinner time – meaning my family gets one low carb meal a day – and I absolutely have to find ways to be creative with a low carb menu.

stella-style-low-carb-cookbookGeorge Stella and his “Stella Style” cooking has saved my diet on more than one occassion.

What I like about this cookbook is that it’s not exactly Atkins.  I don’t follow quite as strict a regimine as the Atkins Diet, so it was nice to find a low carb philosophy that was closer to mine.

“Stella Style” is basically about eating low carb – not counting carbs.  You make foods that are naturally low in carbs – especially “bad” carbs found in things like flour and sugar – and don’t worry about how much of it you eat.  It has been an easier way to maintain a low carb lifestyle long term for me.

My mom gave me her copy of this cookbook at Christmas and it has found a permanent home in my cookbook stand.  It’s also starting to fall apart.

My family is LOVING the recipes in this book.

Some of our favorites are:

*Low Carb Pizza – like, with actual crust.

*Low Carb Cheesecake – which my husband swears is the best cheesecake he’s ever had period.

*Low Carb Soy Bean Chilli – almost everything in chilli is low carb anyway so this was an easy adjustment.

*Low Carb Zuchinni Muffins - can I tell you how much I had been missing muffins?  It’s so awesome to have something to put butter on again!

*Low Carb Tequila Chicken – I’m pretty sure the alcohol burns off in the oven.  I mean – it must, right?

*Low Carb Blueberry Pancakes – now if only I could drown these in syrup, I’d be a happy girl.

*Low Carb Meat Lasagna – lasagna with no noodles?  Yep.  And it’s a family favorite around here.  It’s also a good option when we have guests over.

I have three or four other low carb cookbooks in my kitchen, but this one is by far my favorite.

OMG, you are my hero. I am on a very strict low carb diet right now, and have been doing low carb off and on for years. I am looking forward to getting this book! Thanks!

Just bought the book…I went STRICTLY low carb about a year ago and almost made my goal weight…then I got back from vacation and I’ve been all over the place since…but SUMMER is coming, hence SWIMSUITS, and I want to feel HOT…so thanks for the book suggestion!

Nice! Those recipes sound really good!!!

  4. You know what my problem with low-carb is? Well, besides the fact that I love all things bread, rice, and pasta. Breakfast. I’m not a big egg eater – maybe once a month? – so coming up with breakfast ideas was hard for me when I was on South Beach. I ended up eating lots of deli meat/cheese rolls or turkey bacon & cheese.

  5. a cookbook? oh, that thing that i put into the awesome brand new cookbook holder that is still in the box. well, at least when i buy this it will look great on my kitchen counter. collecting dust.

then again, maybe this is just the thing to get me started cooking.

Yes, the alcohol burns off *grin*

I can’t wait to get the grill going again. It’s so easy to reduce the amount of ‘bad’ carbs when I grill.

Looks like a well used ‘friend’

That’s awesome. I’ve lost 25 pounds since January just by cutting carbs, so this is totally on my shopping list.

How funny! I was going to ask you what that cookbook is once I moved. I loved that chili and also the tequila chicken. Come to think of it, that baked “spaghetti” wasn’t too bad either.

    Thanks for the info!
